Adrian Săftoiu is a Professor of Gastroenterology and Hepatology at the Department of Gastroenterology and Hepatology, Elias Emergency University Hospital, University of Medicine and Pharmacy Carol Davila Bucharest, Romania. He is a Visiting Professor at MD Anderson Cancer Center, Houston, Texas, USA and a Clinical Visiting Professor at Copenhagen University Hospital Herlev, Denmark.

He obtained his medical degree from the Faculty of Medicine, University of Craiova, Romania. He trained at the University of Medicine and Pharmacy Craiova, Romania (Internal medicine and Gastroenterology) and completed his training in Gastroenterology at the Department of Medicine V, University Hospital Aarhus, Denmark, at the Gentofte University Hospital Copenhagen, Denmark, and at the Johannes Gutenberg University of Mainz, Mainz, Germany.
